Construction starts on new restaurant in Nottingham city centre

Construction work has started on a new sushi restaurant which is set to open on one of the busiest city streets in Nottingham. KOKORO, based on Exchange Walk just off Market Square, is expected to open on January 6.

The new restaurant will open at an old phone shop on the street after building work is complete. The outside has already been painted with the restaurant's signature light aqua shade with signage.

KOKORO has more than 50 branches across the UK, including London and Leicester, but this is the first Nottingham branch. It is also available through Deliveroo in cities where there are stores, suggesting it may be the same for Nottingham once it officially opens.

KOKORO was started just over a decade ago by founder Rak-Kyu Park in Kingston-Upon-Thames with just three tables available for customers. It offers authentic, handmade Korean and Japanese dishes both hot and cold. KOKORO stands for 'heart', 'soul' and 'spirit' which the team says they put in every meal they make.

Jaedoo Park, director of KOKORO Nottingham, said: "We are delighted to announce KOKORO is opening a new restaurant in Nottingham on January 6, 2023. This northeast Asia-inspired restaurant serves a variety of options including hearty hot food or simply grab-and-go takeaway and sushi selections with a focus on healthy food made on the premises.

"KOKORO has been successfully growing its strategy supported by its strong food delivery sales. KOKORO's chicken katsu curry is one of the most ordered items on Deliveroo. We are focused on providing authentic, healthy and tasty food while adding more vegan options."

Signature sushi on the menu includes fresh pre-selected sushi boxes with salmon or cucumber hosomaki, large California rolls and salmon nigiri. The restaurant also offers Hawaii-inspired poke bowls with all fresh ingredients including salmon or prawn and kimchi.
